Homemade Macaroni and Cheese

Family Favourite -Comfort Food

1 package elbow macaroni pasta- 900 gr package 3176.5 calories
8 cups skim milk (made from powder) 8 x90 =720 calories
500 gram package medium cheddar cheese 2000 calories
1/2 cup corn starch 240 calories
3 Tbsp vegetarian chicken soup base #466 Bulkbarn.ca 288 calories
Total 6424 calories

Cook pasta and drain
Grate cheese
Cheese sauce- make a white sauce with the milk, corn starch, and vege-chicken seasoning. Best to use low to medium heat so milk doesn't burn, or use a double boiler.
Add grated cheese, stirring to melt cheese. Reserve 1 cup of grated cheese to sprinkle on top.

Divide pasta in 2-3 dishes. This time -used a 9 by 13 and a 10 by 15.
Stir cheese sauce into pasta.
Sprinkle reserved cheese on top

Bake in oven at 350 degrees F for 1 hour.

Granola Recipe experiment

5 c quick rolled oats
2 c large rolled oats/rye flakes
1/2 c corn meal
1/4 c amaranth seeds
1/4 c ground flax
1/2 c sesame seeds
1 c coconut unsweetened
1 c buckwheat
1 c steel cut oats
1 c sunflower seeds
1 c almond slivers
1 c walnut pieces
1/2 cup total of brown basamati rice +12 grain cerreal + bulgar +pearl barley soaked in 1/2 cup water +syrup jar that needed to be rinsed out. ( Harder cereals- let thm soak while assembling the other ingredients)
2 tsp salt
1 Tbsp art vanilla
3/4 c oil
1/2 cup water
3 heaping tsp of plum jam
250 degree oven
Place on trays
Bake 1 1/2 hrs. Stir every 30 minutes.

4 Pm. ended up with 2 - 2 lb bags. Very tasty.A lot of fun.
Next time, less amaranth, and other small stuff. More variety.

From Village Bakery in Dundas- Chelsea buns. Really soft moist. Best ones we've had in ages. Reminds me of the food on Friday nights at Kingsway College and Mrs Watson's chelsea buns. What fun for food!

Picking Apricots & Peaches

Picking fresh fruit at a pick your own can be a fun experience when it's something as easy to pick as apricots and peaches. Went on a family outing to an orchard in Beamsville -Cherry Avenue Orchard. Alejandra really enjoyed herself. Great to nibble on the fresh fruit fresh from the tree. Had a picnic lunch with the Duncans and Carol von Gunten and Chansonette.

I refuse to pick strawberries because I did it when I was 10-12 years old. Got paid a nickel a basket. Wasn't fun. Don't care to pick strawberries any more.

Lakeview pastry


Visited a pastry shop on Burlington on Thursday. Don't often end up in downtown Burlington, but Rosemary had an appointment with a friend. I had a few minutes to spare. Realized that Tradebank had sent an email just a few days earlier about Lakeview Pastry.
Asked them for an assortment of their cookies and pastries. Got 2 boxes full of goodies.
Alejandra really enjoyed the gingerbread man. "Want to start with his arm or his legs?" "Legs." it was a crumby end to the gingerbread man.
Kevin had a sample also, left one for Jackie. Did she get a taste or not?

Took the rest to Franco and Fina who had her sister visiting from Panama. The boxes were empty by the end of the day.

Potato in Straw







Ken, good friend of mine grows potatoes under straw. So this year, I saw some seed potatoes at the garden centre and thought, why not?

Bought 10 lb of seed potatoes. Certified. Norland is a
red Potato. Put the potatoes in some egg cartons to let them get started sprouting. Then cut them up and planted them.


Then got some straw from the farmer across the road who takes hay off of our field and piled it on.

Japanese Food Shopping


Took Grandma to the Grace Food Store- Korean, Japanese and Chinese Grocery.
Bought sushi rice, nori (seaweed) for maki-sushi, "brown bags" for age-sushi, (pronounced ah-geh-not sure if my pronunciation symbolization is correct), soybeans (eda-mame), chow mein noodles for Grandma's famous chow mein, some tofu, some u-don noodles, and some red bean cake for dessert.

Volusia County Fair




Went with Greg, Justin & Shelli to the Volusia County Fair. Enjoyed a "blooming onion."

We figured at a State or County Fair almost anything deep fried would become an instant hit at the food stands. The ultimate would be a deep fried fat. Take some fat, margarine, lard or something like that, dip it in a batter and deep fry it. What could be more greasy than that?

In the Blue Ribbon building, we say a table setting exhibit. One of the first prizes was for a contrasting table. One side for someone like Greg. Plastic cutlery, camp dish, outdoor warmer vs. lace, china and silverware.

And we saw a whole lot of cute and harey animals.

Topical Food

In keeping with the Hawaiian theme, we are trying to keep our ice cream topical or is it tropical? Last week we had Macadamia nut ice cream. This time we found two flavours from Roselani. The Pa'uwela Sunrise has Maui Pineapple chunks in Orange Creamsicle. The Haupia is a Coconut pudding. This one is especially yummy.

We also found Meadowgold yogurt with flavours such as mango, papaya, lychee, coconut, guava. In the little containers, these are great for taking to the beach for a snack. Also for snacking is tapioca pudding.

Family Time

This Saturday (Sabbath), we were glad to have a number of friends and family over for a relaxing meal, fellowship and fun. . . . and some great food. Fina brought a eggplant dish- asian eggplants with onions and a very tasty sauce. (Eggplant is my favourite food, by the way).
Mom made chow mein- her specialty, and aga-sushi (brown bags) which disappeared almost instantly. Rosemary made a noodle dish, Tim & Adelia made their special dressing for their salad, Leyanne brought some cookies- we licked up the crumbs, Karen brought 2 kinds of lasagne. . . .

As well Peter and Jessica were in town, Jessica has a Music Teachers convention to attend. It was really nice to visit with them as well. They are living in St Louis Missouri and drove up the 14 hours from there to be here for a few days. Uncle Dave was also there, as was Yecy and her two girls.
